I went out to dinner with one of my lady friends last year, and she ordered a dish of turmeric meatballs with hummus, arugula . . . the recipe you see here. After she let me sample her dish, I knew I needed to try to make that at home.
This dish is unusual, kind of artsy looking, and really tasty!
Steps to Make Turmeric Meatballs with Hummus and Arugula
First, you’ll mix up the turmeric glaze for the meatballs. Turmeric is a healthy seasoning. Side note: turmeric is so healthy that I take it in capsule form every day as a supplement to reduce overall body inflammation.
Careful! Turmeric will stain.
Turmeric’s bright yellow color will stain your clothing, countertop, anything, so take precautions when mixing up the glaze.
I use store-bought meatballs for ease in this recipe. Simek’s brand is my favorite, but I found a good one from Whole Foods market also: organic beef meatballs.
While the meatballs are baking, whip up a batch of homemade hummus. Click on this link to find the recipe. This step takes only 10 minutes, and fresh hummus gives great flavor to this recipe.
Steps to Assemble the Dinner
First, divide the fresh hummus equally into four medium-large dinner bowls.
Then, add a bed of arugula. Arugula is a type of green that resembles dandelion leaves. It has a slightly bitter taste that pairs well with the hummus and meatballs. Substitute any type of green if you don’t have arugula on hand.
Next, add some of the cooked meatballs with the turmeric glaze.
Complete the dish by adding gourmet crackers and sliced pickles. Here’s a link to a 4-pack of Wasa crackers or a single pack if you live near a Whole Foods market.
