Spicy holiday corn casserole is a must at all our holiday get-togethers. It used to make its appearance only at Thanksgiving. But then it became a staple of our family Christmas menus. And then it even found its way onto our Easter menu.

Do you know how much we like this dish? Well, guess how many recipes I make. Two, three, four? No, I make five. Five recipes!

This spicy holiday corn casserole is a favorite leftover. And you know how good those holiday leftovers are! It blends well with turkey, ham, mashed potatoes, sweet potatoes, broccoli–whatever dishes are staples for your holiday menu.

And although Thanksgiving, Christmas, and Easter menu items are delicious, they often are lacking in spice. This spicy holiday corn casserole fills in that gap rather nicely.

In my family, we divide up all the recipes that we want to make for the upcoming holiday and make them all a day or two early. Since the prep for this one is easy, it’s always one of the first ones taken on the list of things to make. And it keeps well in the fridge if you assemble it early.

Prepping the Corn Casserole

The most difficult part of the prep is chopping the jalapeno. I usually do that first to get it over with. The rest is just a matter of not burning the cream cheesebutter combo, and opening cans of corn (lots of cans if you’re making five recipes!).

I recommend you buy organic cans or frozen packages of corn.

Organic corn is reliably more crisp than other canned or frozen corns. And you also won’t have to worry about the pesticides and GMO issues with standard corn.
