Mini Oatmeal Cups are a cute and tasty addition to any special breakfast occasion. They’re perfect for Easter or any holiday. And because they’re small and cute, I even made them for my daughter’s bridal shower.
With only 6 ingredients, including the yogurt filling, you can whip up these small, tasty cups in minimal time. And you can prepare them up to 3 days ahead, which helps ease the stress of last-minute prep.

Making Mini Oatmeal Cups
Simply mix 1 1/2 cups oats with 1/4 cups applesauce, 2 tablespoons honey, 1 teaspoon cinnamon, and 1/4 teaspoon salt. I like to use the old-fashioned variety of oats, but the quick version works well too.
Next, you’ll need to grease a 24-cup mini muffin tray with cooking spray. Measure 1 tablespoon oat mixture into each mini oatmeal cup. You will then use a combination of your fingers, thumbs, and a small spoon to press the mixture into the bottom and sides of each cup. Alternatively, you could make 12 regular-size oatmeal cups instead of the 24 mini ones.

Bake the cups at 350 degrees for 10 minutes. Cool an additional 10 minutes after the cups come out of the oven.
Just before serving, fill the cups with yogurt and fruit. One teaspoon yogurt is adequate for each mini cup, and smaller wild blueberries make a good size for the topping.
