I love avocadoes! Nevertheless, I’ve met several people who have no experience with the delicious bundles of creamy goodness. Easy guacamole is the best way to serve up fresh avocadoes.
The first thing you need to know about an avocado is that a ripe one is black on the outside, not green, and should yield to pressure when you press it with your finger. The inside is light green and the texture of an almost-ripe banana.
Guacamole goes well with any Mexican recipe: tacos, burritos, enchiladas, chile relleno casserole. Serve as a side along with homemade salsa and nummy refried beans.
Honestly, some days (many days) I whip up a plate of guacamole and eat it with some healthy non-GMO crackers. This meal is delicious and keeps me satisfied for hours, in addition to the good nutrition I get from the avocadoes, lime juice, and cilantro.

Regarding ingredients, fresh-squeezed lime will always taste best, but the bottled kind works just fine for speed and ease.
If you’re new to cilantro, look for it in the herb area of the produce section. It’s sold as a “bunch,” either enclosed in plastic or unpackaged.

If you want to go super easy and create fewer dishes to wash, simply smash all ingredients with a fork. You’ll need to snip the cilantro a bit to make smaller pieces if you go with this option.

Easy Guacamole
Ingredients
- 2 avocadoes
- 1/2 bunch fresh cilantro
- 2 tsp lime juice
- 3/4 tsp salt
Instructions
- Cut avocadoes in half and scoop out flesh into food processor, discarding pit.
- Rinse cilantro and add to food processor.
- Add lime juice and salt.
- Process until smooth.
- Serve as a side to any meal or as a dip with chips or raw vegetables.
