The end of summer signals school, changing leaves, and cooler weather. Yes, but most exciting of all, the end of summer is salsa time!
This homemade salsa is easy, nutritious, and a delicious way to use your harvest of tomatoes (or someone else’s harvest that you buy from the grocery store or farmer’s market!). Some might refer to this recipe as pico de gallo since all the vegetables are raw, but whatever you call it, it’s a delicious accompaniment to chips or any Mexican dish.
Roma tomatoes are most ideal for salsa because they are fleshy without excess liquid. But homegrown tomatoes of any type are great when made into salsa.
A pepper adds both flavor and color. Use whatever type you like and/or can find: banana, Hatch, Anaheim, green chile, or even some sweet green pepper.
I like to use a sweet white onion, but red would work as well.
Coarsely chop the tomatoes, sweet onion, and pepper.
Use a food processor to chop the jalapeno, garlic, and cilantro. This tool will save your eyes and your sanity from these potent ingredients. You need these chopped tiny before adding to the tomato mixture.
Mix the food-processed vegetables with the tomato mixture, add 1 tablespoon lime juice and 1/2 teaspoon salt, and stir. Homemade salsa is delicious served with chips, refried beans, or any Mexican dish, such as chile relleno casserole. Do yourself a favor and buy organic chips to accompany this salsa, because regular chips are generally made from GMO and chemical-laden corn.
This homemade salsa stores well in the refrigerator up to a week.
