This colorful veggie salad is just the ticket when you need a healthy side dish for a group of people. Be advised that you’ll ideally assemble this salad the day before you need it and let it sit overnight before serving. But if you were planning to serve it sooner, go for it. Sometimes we need to cut ourselves a break when we don’t look at the details of the recipe until the last minute!

I remember my mom making this salad years ago when I was young. I got her recipe and made it often for my own kids as they were growing up. They may not have loved it when they were small, but my theory is to consistently feed kids healthy foods and they’ll grow to like and appreciate them.

The other detail to know about this recipe is that it makes a lot! This salad is ideal for a potluck, family get-together, holiday, or as a side dish any day of the week.

If your family is small, maybe start with half a recipe so you won’t have more leftovers than you can handle.

The only ingredient you have to cook is the bacon. If you’re choosing to use ham, which I did for the picture since I had leftovers from Easter, then chop two cups into-bite-sized pieces.

For the vegetables, you’ll wash and chop each one into bite-sized pieces. Peas, of course, don’t require chopping. Frozen peas don’t take long to thaw, either, so mix them right in with the other ingredients.

This colorful veggie salad couldn’t be easier, and it’s definitely delicious!
