You’ll love this versatile enchilada sauce that’s better than what you’ll find in most restaurants! Read further to find the ingredient that makes this sauce so delicious.
Start with a clove or two of fresh garlic, which you’ll cook in oil. I use coconut oil because in my extensive personal research into oils that are the most healthy, coconut oil, with its medium chains of fatty acids, comes out on top for frying.
Have your 2 tablespoons flour, 1 tablespoon chili powder, 2 cups water, and 6-ounce can of tomato paste ready to go before you start frying the garlic.
Nicely cooked garlic, golden in color, easily becomes burnt garlic if you turn your back for one moment too long!
As soon as your garlic is golden colored, add the flour and chili powder. Stir.
Now add your 2 cups water alternately with the tomato paste to ensure the paste gets adequately mixed in.

Mix thoroughly, then add the 1 teaspoon dried oregano and 1/2 teaspoon salt.

Besides the obvious use for this sauce–to make enchiladas–it is also great for smothered burritos. Fill a shell with burrito ingredients such as meat, beans, rice, and veggies. Add a couple spoonfuls of enchilada sauce. Then, roll up your burrito and spoon more hot enchilada sauce over the top. Sprinkle with cheese, which will melt deliciously into your enchilada sauce.

Ingredients
- 3 Tbsp coconut oil
- 1-2 cloves garlic , minced
- 2 Tbsp flour
